Meet Rosa, the women that brings apfelstrudel to the next level… Apfel what? Apfelstrudel is a local specialty from South Tyrol and this one is going to be the best apfelstrudel you have tasted in your life!
How to start
Preheat the oven to 190°C.
Ingredients
- 185 grams flour
- 125 grams butter
- 65 grams sugar
- 1 tablespoon baking powder
- 1 egg
Mix the flour, melt the butter and put the eggs, sugar and baking powder in a bowl and turn it into a dough by hand. Keep working the dough for 5 minutes. Cover the bowl and put it in the fridge for 30 minutes. While the dough is in the fridge you can start making the filling.
Filling
- 4 apples
- 1 lemon
- 5 grams raisins
- 2 grams pinenuts
- 1 teaspoon cinnamon
- 2 tablespoons of sugar
- 4 tablespoons of breadcrumbs
Peel the apples and slice them in small parts. Add lemon juice to prevent the slices of turning brown. Mix the apples with the raisins, pinenuts, bread crumbs and add sugar and cinnamon, keep on mixing it together.
Get a kitchen towel and put the dough on the towel. Add flower to the dough and try to make the dough as rectangular as possible with a rolling pin.
Spread the filling and fold the edges carefully. Roll up the pastry and press it together. Place this on a baking tray and brush the outside with egg yoke. Bake the pastry for 40 minutes.
Slice the roll and serve with powder sugar on top.
